Executive Chef Shige Matsuzawa and his wife Debbie opened Shige Japanese Cuisine, the first Japanese restaurant in downtown Boise in 1992, with a vision of creating Boise's finest Japanese dining experience. After nearly 26 years in Boise, the Matsuzawa’s have taken that experience and instilled it into their current location in Meridian, Shige Sushi Express.
Shige infuses every dish he creates with his extensive knowledge and passion for perfection. He started his career as a Chef in Japan, before moving to California and then relocating to the Treasure Valley.
Shige is honored to share his culture with the Treasure Valley and prides himself on creating authentic dishes that are pleasing both visually and to the palate.
